Ingredients:
Porridge
50 g oatmeal
100 ml oat milk
50 g pumpkin puree (pureed Hokkaido pumpkin)
25 g unsweetened applesauce
1 tbsp coconut yogurt
2 tsp Pumpkin Spice*
(cinnamon, ginger, cardamom, nutmeg) and 1 pinch of salt
Toppings
1/2 apple
1 tsp coconut oil
1/2 tsp cinnamon
Blueberries
walnuts
extra cinnamon
Dash of oat milk
Preparation:
1. heat coconut oil in a pan, saute apple slices for 5 minutes over low heat, turning several times, until soft. Optionally, add a dash of water and season with cinnamon or pumpkin spice. .
2. In a saucepan, heat pumpkin puree and oat milk and add oatmeal, 2 pinches Pumpkin Spice and 1 pinch salt. Simmer over low heat for 5 minutes, mixing in 1 tablespoon of coconut yogurt at the very end.
3. top porridge with apple slices/slices and arrange with walnuts, blueberries and extra cinnamon. If you like, add a dollop of oat milk over your porige and enjoy!
