Raspberry buckwheat bars




INGREDIENTS FOR APPROX. ONE SHAPE (25*20cm)


70 g oat flakes

50 g buckwheat

50 g spelt flour or ground oatmeal

20 g flaxseed meal

40 g dates + 50 ml water

80 g nut puree

1 pinch of salt

70 g raspberries

120 g vegan dark chocolate



 

These delicious buckwheat slices are easy to prepare and can be stored in the freezer. A quick grab to the freezer and you have a dessert for spontaneous visitors ready or a healthy snack for in between.


I take the raw bites out of the freezer before eating them and let them thaw quickly.

Especially in warm temperatures, the cool buckwheat bites are a real hit, but also in combination with a warm drink, it's never too cold for this snack! ;)


 

PREPERATION:

1. Mix all ingredients (except the raspberries and chocolate) with a blender. The "dough" should be a smooth mass, so that you can form a ball out of it. If the dough is still too dry, you can add water little by little until it is nice and soft.

2. Press the dough into a form lined with baking paper and put it in the freezer for a few minutes.


3. In the meantime, melt the chocolate in a water bath and if you use frozen raspberries, let them thaw.

4. Take the form with the buckwheat mixture out of the freezer and spread the raspberries and the liquid chocolate on it. Put the whole thing back in the freezer for about 15 minutes until the chocolate is hard.

5. Let it thaw for a few minutes and enjoy with a warm drink! ;)
